Yes, I like soup. I make my own quite a bit, but when I don’t I like Campbell’s Chunky Soup brands. I have two favorites…
1. Vegetable beef
2. Sirloin burger

French Onion Soup. Pretty easy to make. Carmelized onions, beef broth or stock, Gruyere Cheese and crusty bread.
Egg Drop Soup is also super easy to make. Google for recipes.

I like potato soup, just a very simple, potatoes, celery, onion, carrots, S&P and boil in stock instead of water. When cooked pour off some of the liquid and add milk and mash, just regular potato soup, BUT when you serve it, make up dishes of crumbled, cooked bacon, green onions, sour cream, and cheddar cheese, and let everyone make their own. What a HIT!!! We have it for Christmas Eve every year with open face cheese sandwiches (melted under the broiler). Yummers!

I love soup. When it gets cold, I want something that sticks to the ribs. Minestrone, bean, chicken noodle, French onion, even chili (yes, I know it isn’t soup)!

Oh I love soup too! As soon as the crisp cool fall weather hits I think of soup! I have already made a beef stew and chicken noodle soup (homemade) I would try those and broccoli chedder, sherry chicken chowder and a nice “garbage veggie soup” I call it garbage veggie because I put every and any veggie in it. I love it because it stays quite a while in the frig w/out any meat product in it. Nothing better than having a hot cup of soup ready in mins when you get home on a fall day (some fun different veggies to use, broccoli rabe, fennel, cabbage) And if it’s a really cool day I put a few red pepper flakes onto the mug of soup before I heat it up.

I love when my boyfriend makes dinner. He can only use the crock pot, so he makes a stew. Stew beef, carrots, onions and he uses a few secret ingredients he won’t ever disclose. Anyway, you can find recipies anywhere and choose your favorite. Serve it over egg noodles and get some nice rolls to dip. That’s the best winter meal, I swear. Nice and hearty, very easy to make, and it reminds you of something you would have eaten growing up .Mmmmmm. Ohhh, also cream of broccoli with shredded cheddar on top….Or potato soup with some chives, cheddar and bacon bits..mmmm just a few ideas, enjoy your soups!

I love the Zuppa Tuscan soup at the Olive Garden. Me and a friend looked up online and found a copy cat recipe and we make it all the time. It’s really good during the winter months.

I got into soups a couple years ago. I use the same basic recipe for all of them. Just change up on the main ingredient(s). I found this great product called “better than bouillon”. Its made from real chicken or beef or clams or lobster. They have about 10 different ones.
Saute some chopped onion and garlic in olive oil. You can add any other veggies at this time too. Add some of the bouillon and water to make your broth. At this point you can just let your imagination go crazy. From broccoli(w/cheese at the end) to mushrooms to butternut squash to zucchini, or spinach. Add a touch of cream after you serve it up. I’ve made soup out of almost every vegetable you can think of. The only reason to buy a can of soup is for a grilled cheese and tomato soup craving.

New England Clam Chowder
tablespoon butter
1 cup leeks, cleaned and sliced
1 cup celery, cleaned and diced
1/2 teaspoon dried thyme
2 tablespoons all-purpose flour
3/4 pound potatoes, peeled and finely diced
2 (14-ounce) cans chicken broth
1 (10-ounce) can clams, undrained
2 (8-ounce) bottles clam juice
1/2 teaspoon ground black pepper
1 whole bay leaf
2 ounces Canadian bacon
1/4 cup heavy cream
1/2 cup sliced green onions
Directions
In a nonstick Dutch oven, heat the butter over medium heat and saute the leeks, celery, and thyme for about 1 minute. Sprinkle over the flour and stir until well coated. Add the potatoes, chicken broth, clams, clam juice, pepper and bay leaf. Simmer until the soup thickens, about 35 minutes.
While soup is simmering, heat a medium nonstick skillet over high heat and dry saute (with no oil or butter) the Canadian bacon until crisped.
Once soup has thickened, add the cream and remove bay leaf. Stir until well blended and remove from heat; be careful not to let boil. Garnish with green onions and crisped Canadian bacon. Serve immediately.

This one is great
CHICKEN VELVET SOUP
1/3 cup + 1 TBSP butter
3/4 cup flour
6 cups chicken broth, divided
1 cup milk
1 cup half and half
1/2 tsp salt
1/2 tsp pepper
1 1/2 cups chopped cooked chicken
Melt butter in large Dutch oven over low heat
Add flour
Stir untill smooth
Cook 1 min, stirring constantly
Gradually add 2 cups chicken broth, milk and half and half
Cook over med heat, stirring constantly
untill thicken and bubbly
Stir in salt and pepper
Add remaining broth and chicken
Stir well
Heat throughly
Yield 2 quarts

So funny you should ask, I have small pot of Tomato Bisque on the stove right now from my Mothers late fall harvest of her plants. I absolutely love soup and actually, eat it year round! Super easy, inexpensive and healthy, plus, my neighbors love it (can’t make a small pot of soup, ever!). So, I’ll start with my favorites:
Clam Chowder (NE or Manhattan), Seafood Chowder, Cream of Mushroom,(Wild mushroom mix is sheer heaven) Lobster Chowder, Creamy Tomato Bisque with Basil, Creamy Chicken and Vegetable soup with Wild Rice, Beef Vegetable, Beef, Mushroom and Barley, Turkey vegetable, Tomato Zucchini, Twice Baked Potato Soup, Creamy Potato and Ham, Potato Chowder with loads of Bacon, chives and Cheese, Creamy Broccoli and Cheese, Cream of Asparagus, Lobster Bisque, Tomato Vegetable, Vegetable with Wild Rice, Corn chowder, Cabbage Soup.
I loved them pureed, chowders, chunky, tons of flavors or simplistic. I am constantly trying new veggies, proteins, stocks and bases to improve my knowledge, skills and tastes. I am a budget conscious shopper though, I buy what’s on sale, what’s in season and consider also what I have at home already. That’s what soup is really about, using up your leftovers and in excess, soup is a poor mans delight and I absolutely love that. It’s a challenge in and of itself, how to make what you have, with a couple of purchases into something delicious and unique! So, from one soup lover to another, I hope I’ve helped you out today. I wish I wasn’t so tired though………..I could list my favorite soups for another 2 paragraphs! I hope you have a great weekend!

I’m a big soup lover. I usually drink 3 bowls of soup at dinner and I would get so full that there’s no room in my stomach for anything else. I also love lobster soup and minestrone soup. There’s also pork soup with a vegetable I don’t know the name of. My mom would buy it from this chinese supermarket. It’s pink and has a crunchy texture.
